Vegetable Upma

Ingredients
1 cup FarMart Pantry's Semolina (Sooji)
1 small carrot, finely chopped
1/4 cup green peas (fresh or frozen)
1 small onion, finely chopped
1 green chili, finely chopped (optional)
1/2 teaspoon mustard seeds
1/2 teaspoon urad dal (optional)
1 tablespoon oil or ghee
2 cups water
Salt to taste
Fresh coriander leaves for garnish
Instructions
Dry roast the semolina in a pan over medium heat until it turns light golden. Remove and set aside.
In the same pan, heat oil or ghee. Add mustard seeds and let them splutter.
Add urad dal (if using) and sauté until golden.
Add chopped onions and green chili. Sauté until onions are translucent.
Add chopped carrots and green peas. Cook for a few minutes until vegetables are tender.
Add water and salt. Bring to a boil.
Gradually add the roasted semolina, stirring continuously to prevent lumps.
Cook until the mixture thickens and the water is absorbed.
Garnish with fresh coriander leaves and serve hot.
