Vegetable Upma

Ingredients

  • 1 cup FarMart Pantry's Semolina (Sooji)
  • 1 small carrot, finely chopped
  • 1/4 cup green peas (fresh or frozen)
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal (optional)
  • 1 tablespoon oil or ghee
  • 2 cups water
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  • Dry roast the semolina in a pan over medium heat until it turns light golden. Remove and set aside.

  • In the same pan, heat oil or ghee. Add mustard seeds and let them splutter.

  • Add urad dal (if using) and sauté until golden.

  • Add chopped onions and green chili. Sauté until onions are translucent.

  • Add chopped carrots and green peas. Cook for a few minutes until vegetables are tender.

  • Add water and salt. Bring to a boil.

  • Gradually add the roasted semolina, stirring continuously to prevent lumps.

  • Cook until the mixture thickens and the water is absorbed.

  • Garnish with fresh coriander leaves and serve hot.
